Faroe Islands kept its Michelin stars – and gained a clover

According to this week’s revelation of the Michelin guide, the Koks restaurant in the Faroe Islands keeps its two Michelin stars, which it received last year, according to Sermitsiaq.

Koks also received a new award, the Green Clover. That is an award given to restaurants making an extra effort to promote sustainability.

Koks has had tremendous success with making traditional Faroese food popular to all. Fermented meat and fish are included on the menu, along with so-called “sharpened meat”, i.e. meat that has been dried in the wind.

The restaurant also places heavy emphasis on using materials from the ocean that have not traditionally been used in cooking.
